I would think that ships wakes would be more visible than this.

There is virtually no white foam until you're right on top of it.

Probably related to the new water being too glassy and smooth with no white caps.

Agreed, the wakes have needed work for a long time now. Parts of the wake is improved in 2.7, but the wake still cuts off too sharply, and combined with the upgraded water, it makes it look like an obvious triangle - it doesn't look very 'natural' at all. If you compare it to a real life wake from a ship, the difference is immediately apparent.
