I have to say if you ask such question, then probably forget about implementing ESM.
For ESM you have to understand not just physics of process you want to model, but understand it`s implementation with math equation. Euler, Runge-Kutta integration, interpolation, least square methods are your friends here.
Coding is just latest part of ESM or EFM

Start with some simple school physics exercise - make interactive model of rotation body with custom inertia, torque and friction. Make it draw angular velocity and so on.
For coding you can use Visual Studio. C# good choice for start. After you can switch to c++ for DCS.

For gides/tutorials look for at gamedev forums, there are a lot of example modelling some IRL processes.
