TGP camera on aircrafts?

You can do it already, but only manually. Switch to A-A mode, make it SOI and try your best to catch an aircraft. Hard to do on fastmovers, but the big fat ones are easy to log on.

Unless I'm mistaken, in A-A mode the TGP should slew onto a bugged target automatically.

Correct. It's just not implemented yet in DCS.

MFDs are monochrome so you can't change their color.

 

The F/A-18C upper MFD's are monochrome, but the F-16C Blk50 has few colors options like blue and white:

Technically it could be called as monochrome as it can be just one color (blue) that is used to create the different shades of blue by varying brightness.

But it looks more like it has different shades of the blue as possibility, but likely it is just brightness difference.

 

But AFAIK it is capable to produce green, red and yellow next to Blue.
