Subsequent "Default" (or rightclick "Restore combo to default") does NOT restore binding. Before making a bug report. Is this new? Could've sworn I've seen this work previously. "Restore" keyboard keys seems to work (just not HOTAS bindings). Not a priority bug, obviously.
