So I’m reading it that I need the stable version of DCS world for the maps release, is that the general consensus? I can only fit one version on my SSD and currently I have open beta. I don’t want to delete that and find out it gets released on open beta.

Things generally release on OB first, so that bugs can be ironed out for those who want to run stable for servers etc. OB is also never behind Stable, so you can't go wrong with OB generally.

Like the others said, OpenBeta is exactly the right choice to get early access to the maps and modules.

The good news is that, if the need arises, you can actually switch between stable and OpenBeta using the DCS updater: GUIDE: Using DCS Updater to Update, Revert, Repair, or Install Modules, so if you needed to switch from OpenBeta to stable for whatever reason, you could have the updater do it for you without un- and reinstalling DCS. Depending on the state of affairs, there could still be some big downloads, but it will save a lot of time and bandwidth in any case.

I've made some space by deleting the normandy map (never played it tho, I just bought it to support the devs, if ther'd be a way to give away as a gift I'll do it immy) :)
