Best Balance keeping the challenge

Me and my buddies used to build missions to fly along but sometimes we push so much the challenge that its almost impossible to be successful in those missions. I'd like to here your opinion of what is the best balance to create a challenging mission but keeping the fun at the same time.

Sometimes putting a lot of SA10 and SA11 in ace mode turns it almost impossible to penetrate the enemy space.
