Payload reference and flight range

There's no fuel calculator in the sim as it is. You should either look up stuff online or make an educated guess regarding the payload and fuel tanks you want to carry and proceed according to this. The F-16 is equipped with a cruise page on the DED, accessible through ICP button 5 (says CRUS under the 5), that will tell you the optimal altitude and mach for max range, but it's not implemented in the sim yet.

The vCVW-17 is looking for Hornet and Tomcat pilots and RIOs. Join the vCVW-17 Discord.

Also is there a "fuel calculator" in DCS which helps me decide the required external tanks to carry before starting a mission?

This is untested but you should be able to use something like 0.10 NM/lb, so

7116 lb internal = ~600 NM + 1000 lb reserve

2516 lb external = ~250 NM per 370 gallon tank

You'll need to allow for additional AB use, combat, etc.

Thanks,

And regarding the payload, is there a reference for DCS payloads in the game?

When loading ordinance you'll be given your figures on the right side including payload and fuel weight

Are you looking for a drag index for the weapons? Try looking for an F-16 net site they may have something.

However, I don't know if DCS models drag with the F-16 module.

Well, there's always DCS Mission Planner (DMSMP) by AMVI_Rider for that
