Not sure if this is the issue, but there are two sets of Bf 109 K-4 controls. Something like "Real" and "Game". Check to make sure you are setting controls in the correct one.

In the FW 190 D-9, there is a MBG (Motorbediengerät) emergency handle. It is red, and labelled with "Notzug für Bedien-Getr.".

And by "placeable" airfield, this also means you can spawn there (i.e. cold start). I know there is a "grass field" object in the mission-editor, but you cannot start there... only...
